The refined study of the structure of aquafarming companies (traditional shellfish farming or new aquafarming) comes out of this study's topic. The research of MERCKELBAGH and ESNOUF (1978), DUMONT (1984; 1985) on the shellfish farming sector and BARBAZANGE (1982), GILLY and WEBER (1985) on new aquafarming showed that production and marketing facilities in aquafarming were connected, in substance, to the facilities of small agricultural production. - Several factors argue in this direction: - French production is basically made up of small-scale and/or family-run companies, especially in shellfish farming. - the work is in the majority of cases carried out by family labour, possibly supplemented by a small number of permanent employees and a high number of seasonal workers. That is not only linked to the exploitation of a natural resource but also to the size of the companies, which derives from the concurrence of many factors, economic, sociological and ethnological, investments, risks, methods of transferring ownership, etc. - aquafarming activities, just like agricultural activities, require the permanent allocation of an area and the level of production depends in part on the surface area that is exploited.
