Description
From October to December 1979, a fishing expedition in the Kerguelen Islands has been carried out with the help of the F.I.O.M., by the freezer trawler "Jutland III", belonging to the New Distant Fisheries Society of Bordeaux. The unloaded fishes belong to five different species: Notothenia rossii rossii, Notothenia squamifrons, Channichtys rhinoceratus, Champsocephalus gunnari, Dissostichus eleginoides. We created for each species a specification sheet including some general information on the fish as well as some data on the flesh percentage, (2) the chemical concentrations, the study of the electrophoretic spectrum of water soluble proteins (electrofocalisation principle; Science et Pêche, December 1977), and the results of the sensory analyses carried out on cooked fish in accordance with the Codex recommendations (bain-marie cooking in a sealed plastic bag), and on smoked fish. Some trials will be conducted in the future on the making of frozen breaded steaks from fillet blocks or fish pulp. In the current state of the trials, it seems that the traditional preserve is not the most suitable processing technique.
