Description
The continuous decrease of the stocks of species traditionally exploited by fishermen and fish processors leads them to look for new raw materials. The substitution of species becomes more necessary each day and we currently see numerous attempts at using species which used not to be sold or used. This way, different deep sea fishes (blue whiting, ratfishes...) or Antarctic fishes (nonotheniids, channichtids...) became of interest for many nations. Among the species which could be of interest for the French industry are cephalopods. The molluscs, extensively used in Asian countries (Japan, South Korea, China) remain hardly used in France, at least in the transformation industry.
