Description
The New Zealand oysters, imported for a few years in the Marennes area, have almost always shown a greater waste rate than the French oysters. In 1930, the losses were exceptionally heavy. During an expedition in Marennes, I witnessed some oyster farmers who could not supply any product belonging to this category even if they had been stocked up earlier. The mortality rate went over 40 % and most of the oysters which survived were sick. Some oysters have grown enough and are edible, but the appearance of the shell would put the customers off.
