After having defined the specificity of shellfish farming compared to agriculture and fishing, we used a global approach to study shellfish farming in the Thau Lagoon. We present the Lagoon and the shellfish farming zones, then production and finally the organization of this industry. Farms were then delimited, which required identifying concessions and which farming operation they were part of. Insofar as the development of shellfish farms is contingent on the strategies adopted by the shellfish farmer, we attempted to determine these strategies and observe the interactions between the development of the Lagoon and that of farms.
