Description
This report was produced as part of Task1.2 of the FORESEA project. The aim was to provide an overview of the French consumption of Fishery and Aquaculture Products (FAPs) based on an analysis of the structure and main trends in consumption from the end of the 1980s to the end of the 2010s. Changes in supply and demand were studied using complementary approaches. Firstly, the seafood balance sheet method was used to estimate the volume of seafood apparent consumption and its breakdown by main commodities. It highlights the dependence of the French market towards external supply which increased with the fall in fishery production and the significant rise in imports to meet the growth of the population and demand. Secondly, data from Consumer Panel Survey (CPS) were used to analyse more thoroughly the evolution and structure of FAP consumption at home by market segment (fresh, chilled, frozen, canned…), the evolution of purchase behaviour, especially as regards fresh fish, and to investigate the factors determining the purchase of FAPs (regions, distribution circuits and socio-demographics criteria).
