Description
For a long time, fish oils have been the focus of numerous studies among which analytical results occupy an important position. The complexity of their composition has been revealed over the years thanks to the improvement of the analysis methods. At first, only chemical and physical characteristics were analysed then some pro-vitamins, vitamins, hydrocarbons like squalene, etc. were identified. The current physico-chemical techniques bring new possibilities in the study of lipids and unsaponifiables that, though being the smallest part of fat elements, show a heterogeneous composition. Several substances were isolated, in particular some sterols-some of which show interesting biological activity.
