Description
The object of this study is to provide an analysis of how prices are set for demersal species in France. The prices of what the Boulonnais seafaring trawlers bring in are studied more in retail. Several aspects are examined: - the effect of the size of the amounts landed; - the effect of the average size or weight of the fish; - the influence of imports of fresh and frozen fish; - the substitution among species; - the influence of changes of national income; - the effect of seasonality; These aspects are captured in this study from monthly data (these data were provided by the Chamber of Commerce and Industry of Boulogne-sur-Mer as well as by the Central Committee of Maritime Fishing). Excluded from the field of analysis are short-term price fluctuations, as far as the day or the week is concerned. The data focus on the first stage of the sale (auction, shouted out). The fluctuations seen reflect only in part the variations of demand at the retail level: the margins between the landing stage and the retail stage vary greatly, which bring, depending upon the situations, buffering effects or, on the contrary, accelerating effects.
